Finally Friday and I’m working from home, running errands and trying to figure out what my schedule will be for the next day/month/year! It so crazy, I have weddings, showers , appointments, concerts and events all book through the end of October, I’m a bit overwhelmed. I run to Wholefoods because I’m starving and I really don’t want to cook for lunch. I grab the spinach split pea soup (not worth writing about) and a “perfectly sweet” cheesecake. I love this cheesecake, it’s the perfect size, with nuts in the graham cracker crust, sour cream top and a smooth not too sweet filling. I’m glad I’ve never tried to make it, I would eat the whole thing. I got chicken to roast for dinner tonight to go with the romaine lettuce I bought at the Farmers Market. I made a balsamic shallot olive oil dressing and added mozzarella balls, pistachios and carrots. Two meals-done and done.
