Today a friend is having Taco Thursday at her house and I’m bringing the cheesecake I’ve started making the night before. Having a lot of Philadelphia cream cheese left over, I had to find applications for it. So for breakfast, I included it into my green onion ommlet with avocado and it tasted like I put Boursin in it. Very tasty and filling too, it lasted me until dinner which we had grassfed beef organic hard shell tacos with all the fixings. Like I said, California style. Appetizers included chips, guacamole, fresh salsa and endive with cream cheese , almonds and raisins. Not only did I bring over the sour cream vanilla bean cheesecake with blueberries on top, I made Rick Bayless Meyer lemon margarita (Recipe) because all I had in the cupboards were Meyer lemons and no limes. Of course I didn’t have time to infuse the Meyer lemon rind for a month but I did put the tequila and zest in a foodsaver and vacuum sealed it for 2 hours. Add a lemon sugar rim and voilà it was a good stiff tart drink with a gentle orange essence. I will be making more of this.
